Christmas Traditions Part 3

So I had this really funny picture from like 4 years ago but I can't find it anywhere...you'll just have to do without. It was a picture of me and my brother, Neal, making toffee crunch. We were making it because this particular year we had asked my mom to make it and she aluded to the fact that we'd have to make it ourselves if we want it so bad...so we did just that! Good thing too...I believe this one is my dad's favorite treat during Christmas time (he doesn't call me his favorite daughter for nothing!) ;)

I love this recipe! I wouldn't mind making it more than just Christmas time...if it wasn't for all that butter...

Toffee Crunch
Butter a cookie sheet
In a medium saucepan, combine 1 1/3 C sugar, 1 C Butter (melted), 3 T water, and 1T light corn syrup. Cook over medium-low heat, stirring occasionally, until it reaches hard crack stage (300 degrees). Once it reaches the desired temperature stir 1/2 C chopped almonds. Immediately pour the mixture onto the prepared cookie sheet and spread to 1/4" thickness. Sprinkle 1 C chocolate chips (I use mini's because they melt quicker) on top of the hot candy. Let it stand for about 1 minute then spread to frost. Sprinkle 1/2 C chopped almonds evenly over the chocolate. Refridgerate until the candy is cooled and the chocolate is set. Break into pieces (a meat cleaver works great for this).

Yield about 27 oz.
